Almond Cloud Cookies Recipe
Dairy free, gluten free and naturally sweetened, these cookies are heavenly!
If you've followed me for awhile, you know I'm an advocate that you can improve your diet and health without totally ditching the sweets. The secret is to find recipes like this one that satisfy the cravings with low sugar and quality ingredients.
I call these cloud cookies because they're so lightweight & fluffy, like you're eating a little cloud. Since they aren't a dense cookie you can get carried away eating more than one without getting full. It's a great snack or simple dessert :)
1/2 cup almond butter
3 tbsp pure maple syrup
1 tsp vanilla extract
1/2 tsp cinnamon
3/4 cup almond flour
1/4 tsp baking soda
pinch of salt
Preheat the oven to 350F
Combine the egg, almond butter, syrup, vanilla and cinnamon
Next, add in the almond flour, baking soda and salt.
Once all mixed, prepare the baking sheet with non-stick spray or a silicone baking mat.
Create each cookie with 1 spoon full of dough and place it on the sheet.
Flatten the cookie dough balls just a little with your palm.
Cook for 10 minutes and take out of the oven. This helps to ensure they are cooked perfectly.
